Asian Cucumber Slices
Pickling and Fermenting
Ingredients:
2 long English cucumbers
1/2 cup rice vinegar
3 tbsp sugar
pinch crushed red pepper
salt to taste
Instructions:
1. Thinly slice cucumbers and place in a small bowl. Lightly salt to taste and stir.
2. Dissolve sugar in vinegar. Add red pepper and pour onto cucumbers. Stir well.
3. Let marinate, stirring occasionally for at least 3-4 hours.
Notes:
One of the 8oz jars can hold about a third of an english cucumber with about ⅓ of the brine
